Chocolate Pot Cake Pops

Over the holidays, some very special people received these Chocolate Pot Cake Pops, or “heavenly balls” as they were affectionately called. For me, these Chocolate Pot Cake Pops should be called Triple Trouble! Not only are these cannabis cake pops delicious and fun to eat, they are also highly medicated with cannabis butter. *Seriously-Only eat 2 cake pops every 2 hours. These are very strong.   Chocolate Pot Cake Pops Ingredients: 1 box Super Moist Butter Recipe Chocolate Cake Mix 1/4 cup Cannabis Infused Butter 1 16 oz. container of Ready To Serve Frosting, Milk Chocolate 4 eggs 1 cup water 1 bag Wilton Dark Candy Cocoa Melts (14 ounces) Supplies/Equipment: 9-by-13-in (23-by-33-cm) cake pan Two baking sheets Wax paper Large mixing bowl Large metal spoon Plastic wrap Deep, microwave-safe plastic bowl 48 Lollipop Sticks Styrofoam block MAKES 48 CAKE POPS Prepare the cake as directed, substituting Cannabis Infused Butter for regular butter. Bake the cake as directed and let cool completely. Once the cake has cooled, get organized and set aside plenty of time (a couple of hours) to crumble, roll, and dip 48 cake pops. Line the baking sheets with wax paper. Crumble the cooled cake into the large bowl. You should not see any big pieces of cake. Add up to three-quarters of the container of frosting to the bowl. (You will not need the remaining frosting. Save it in the refrigerator for a later use.) Mix it into the crumbled cake, using the back of the large metal spoon, until thoroughly combined. If you use the entire container, the cake balls will be too moist. The mixture should be moist enough to roll into 1 1/2-in (4-cm) balls and still hold a round shape. After rolling the cake balls by hand, place them on the prepared baking sheets and let them rest for about 20 minutes before chilling. Cover the baking sheets with plastic wrap and chill for several hours in the refrigerator, or place them in the freezer for about 15 minutes. You want the balls to be firm but not frozen. Place the candy coating in the deep microwave-safe bowl. These bowls make it easier to cover the cake balls completely with candy coating while holding the bowl and without burning your fingers. The coating should be about 3 in (7.5 cm) deep for easier dipping. I usually work with about 16 oz (455 g) of coating at a time. 8. Melt the candy coating, following the instructions on the package. Cannabis Infused Baklava

This Cannabis Infused Baklava recipe is a perfect blend of The Best Weed Butter Ever brushed on each and every layer of this incredible Mediterranean ambrosia. Sweetened with local honey and full of nuts in a crisp/flaky pastry. Ingredients:  1 (16 ounce) package phyllo dough 2 cups chopped nuts (walnuts or pecans recommended, but I personally used cashews and it turned out great!) 1/2 cup unsalted butter (melted) 1/2 cup of Cannabis Butter AKA The Best Weed Butter Ever 1 teaspoon cinnamon 1 cup hot water 1 cup sugar 1/2 cup honey 1 teaspoon vanilla extract 1 teaspoon of lemon zest Instructions: Take the phyllo dough out of the freezer 2 hours prior to preheating the oven, or refrigerate overnight. Preheat the oven to 350 degrees. Butter or oil the bottom of a 9 x 13 x 2-inch baking dish. Chop nuts finely and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2 – 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 – 8 sheets deep. Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp. Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla, honey, and lemon zest. Simmer for about 20 minutes. Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. THC Infused Sour Watermelon Gummies Recipe

  Ingredients: 4 cups fresh, ripe watermelon, cut into chunks (or 2 cups juice) 7 Tablespoons grass fed gelatin 1/2 cup freshly squeezed lemon juice 2 Tablespoons THC Infused Cannabis Tincture Optional, depending on the sweetness / ripeness of your watermelon: 1/4 cup raw honey, Stevia, or Agave Instructions Blend the cut-up watermelon in a blender, then strain to remove pulp. Measure out the gelatin powder you will need. Add half of the juice you are using to a bowl and sprinkle the gelatin over the juice. Leave the juice & gelatin mixture alone for a few minutes: the gelatin will dissolve (or if we’re getting fancy, “bloom”) Take the remaining fruit juice and warm it gently. Warm it, don’t let it get hot or simmer. Slide the grass fed gelatin & juice mixture into the pan with the rest of the warm juice on the stovetop. Whisk until everything is combined and smooth – there shouldn’t be any visible bits of gelatin. Stir in any extra ingredients – in this recipe those will be raw honey and fresh lemon juice. Now your homemade gummies are ready to pour into molds (I used these cute gingerbread shapes) so that they can actually be gummies once they have refrigerated and set! I mix my gelatin mixtures up this way because it’s the best way to get clump free homemade gummies!   Why do you want to eat more gelatin? I know, I know, it sounds kind of unappealing. But it has fantastic health benefits. These days most people rarely consume gelatin, if at all, since the so many sources of natural gelatin (such as beef bones and skin) are very rarely eaten. But here’s why they should be: Gelatin is a source of 18 different amino acids which makes it a great supplement for overall gut health Gelatin is derived from collagen. Peanut Butter Cannabis Kissed Cookies are a holiday cookie exchange favorite!  Originally made in the 1957 Pillsbury Bake-Off.  This cookie surprisingly did not win the 1957 Pillsbury Bake-Off contest, but it become very popular in the cookie world! Ingredients: 1/2 cup granulated sugar 1/2 cup packed brown sugar 1/2 cup creamy peanut butter 1/2 cup The Best Weed Butter Ever, softened 1 egg  1 1/2 cups all-purpose flour 3/4 teaspoon baking soda 1/2 teaspoon baking powder Additional granulate sugar About 36 Chocolate or Peppermint Kisses Directions: Heat oven to 375°F.
